Fish with Tomato Salsa

Ingredients:
* 4 white fsh fillet portions (e.g. Ling, Blue-eye Trevalla, Snapper, Kingfish, Mulloway, Dory, Flathead, Barramundi etc.)
* Mixed salad leaves salsa
* 2-3 tomatoes
* 1 red capsicum
* 1 red chilli (optional)
* 1/2 red onion
* 1/2 cup parsley or basil
* 2 tablespoons red wine vinegar
* 3 tablespoons olive oil
* Salt and pepper to taste
Method:
Finely chop tomatoes, capsicum chilli, red onion, garlic and parsley and combine in a bowl with olive oil and vinegar. Add salt and pepper to taste.
Pan fry or grill fish fillets on a medium-high heat for 3-4 minutes each side. Serve fish fillet on Salad with salsa
